Scramble eggs with whole wheat toast

So I woke up the day after July 4, 2021. The kids where hungry and wanted scramble eggs so I started to grab everything I had in the fridge and decided to make something new and make a healthy breakfast me and the kids would enjoy.

INGREDIENTS:

 * 1 tbs of kosher salt
* 1 tbs of black pepper
* 1 Tbs of oregano 
*5 medium size eggs ( depends on the family size) in my case today is for a family size of 3
*  Olive oil
* 6 slices of whole wheat bread
*  Half a red onion
* 2 garlic heads
* 4-5 slices of salami
* 1/2 cut of fresh parsley
* 1/2 cup of baby spinach
* 1/2 cup of cherry tomatoes 

INSTRUCTIONS: 

* At medium heat into a frying pan add about 4-5 tablespoons of olive oil.
* Dice the salami and add to the frying pan cook till salami is crispy brown.
* Dice the red onions, parsley, cherry tomatoes and garlic and add to the frying pan with the salami. Mix
* Batter the 5 eggs and add to the frying pan and mix.
* Add 1 tbs of oregano, 1 tbs of kosher salt and 1 tbs of black pepper.
* Mix till the eggs get golden yellow and add the 1/2 cup of baby spinach.
* Cook for an extra 3-4 minutes then set aside in a plate to cool.
* On that same frying  pan add 1 tbs of olive oil and add the slice of whole wheat toast and allow each size to get crispy brown.
* Once toasted set aside and serve it with your scramble eggs.
